Pasta Pasta Pasta!

Today I had the opportunity to attend a cooking class. It was such a great experience. In total there were about 20 of us who attended. The location of the cooking school was across the Ponte Vecchio back in this little alleyway. It kind of sort of just popped up on you.

We started by preparing and eggplant caprese. It included grilled eggplant, mozzarella, tomatoes, and a little salt and pepper to taste. This was the appetizer. We continued cooking by making the homemade pasta. We mixed all the ingredients together to create the dough of the pasta. Then we rolled out the dough with a pasta machine, and finally put in our filling to make ravioli. The pasta was so fresh and light. It was filled with a potato filling and on top a bit of a spicy sauce. Now, the smell of the sauce was just phenomenal. I can’t even explain it because it just smelt so good. It is one of those things where you just have to be there. Finally, our meal was finished with a panna cotta dessert. The dessert was light, fluffy, and had chocolate. In other words, it was delicious; I ate it all!

Our chef was named Francesco. He was the funniest and sweetest Italian guy. He would make us laugh, make fun of the mess that we made, and as well of our techniques. He was just such a happy person who loved his job. He definitely made the experience great. It was just such a blessing to meet him! I would go back a second time just to have the experience again.

The interesting part of this will be attempting these recipes at home! Mom you have get a pasta machine and a utensil that smashes the potatoes nice and thin! If it all comes our right, then it will be an amazing Italian meal (you won’t want that Olive Garden pasta anymore).
